World Pastry Championships

As most people who’ve known me for long enough can tell you, I have something of a fascination for baked goods. There’s nothing I enjoy more than window shopping for all kinds of chocolates and candies from various different cultures and asethetics.

So you can imagine my excitement at the Food Network’s showing the World Pastry Championships this past week. Nationally chosen teams of three come together to compete every year, creating large all-sugar sculptures, a chocolate show-piece, and various cakes and bonbons over the course of 2 days. It’s definietly some art worth seeing.

    This blog post has a pretty good step-by-step explanation of how to create a sugar sculpture with lots of photos. (looks like you’ll need a blow torch! :) )

    1kg granulared sugar
    enough water to top the sugar

    200g glucose (add at 110 cels.)
    8-10 drops of tartaric acid (add at 135 cels.)

    cook up to 156 cels.
    chill pot in ice bath.
